Blenders fall into three practical categories: personal (single-serve smoothie cups), countertop (the classic pitcher design), and immersion (the hand-held wand). Which one you need depends on what you actually blend. Smoothies and protein shakes are personal-blender territory; fast, quiet enough, easy to clean.
Hot soups, nut butters, crushed ice, and bar-style blending require a real countertop blender with a high-torque motor (1,000+ watts) and a tamper to push food into the blades. Immersion blenders earn their keep for soups you want to puree in the pot and for whipping emulsions like mayo and vinaigrette. What separates a great blender from a mediocre one isn't horsepower on the label; it's blade design, jar geometry, and whether the motor can actually sustain power under load.
Vitamix and Blendtec dominate the high end because their jars force food into a tight vortex that keeps the blades fed. Ninja has closed much of the gap at half the price.
