Pots and pans are the most-touched part of any kitchen, so build quality compounds. The three materials that dominate modern cookware are stainless-clad (layers of stainless steel bonded to an aluminum or copper core), cast iron (bare or enameled), and PTFE/ceramic nonstick. Stainless-clad from All-Clad, Heritage Steel, or Made In gives the best all-around performance; even heat, indestructible, dishwasher-safe, oven-safe at very high temperatures; and it lasts decades if you don't blast empty pans on high heat.
Nonstick is purpose-built for eggs, delicate fish, and low-fat cooking; its lifespan is 3 to 5 years no matter what the warranty says. Cast iron fills the gap for searing steaks, cornbread, and anything that benefits from extreme heat retention. The real trap is buying a 12-piece matching set; most of them include pieces you'll never use.
A practical starter kit is a 10 or 12-inch stainless skillet, a 10-inch nonstick skillet, a 2-quart saucepan, a 5-quart saucier or sauté pan, and a 6-to-8-quart stockpot or dutch oven. Do I need stainless-clad cookware?
Yes, at least for one skillet and one saucepan. Stainless handles high heat, acidic ingredients, deglazing, and oven transitions; none of which nonstick tolerates well.
How long does nonstick cookware last?
3 to 5 years with regular use, regardless of the warranty. The coating wears gradually. When eggs start sticking, it's time for a replacement.
Is All-Clad worth the price?
For the D3 and D5 lines, yes; the fit-and-finish and heat distribution are a step above everything else. For the casual cook, Made In and Heritage Steel perform within 5 percent at two-thirds the price.
