What to know about cooking utensils

The utensil drawer is where cheap kitchen purchases accumulate and where great cooks quietly invest. The five tools you actually need: a fish spatula (thin metal, beveled edge; flips more than just fish), a silicone or wooden spoon (stirring, not scratching nonstick), a pair of spring-loaded tongs (12-inch for reach, pulls double duty as a flipper), a slotted spoon (for pasta, dumplings, poached eggs), and a heat-resistant silicone spatula (folding batter, scraping bowls). Everything beyond these five is optional.

Material decides lifespan and safety. Stainless steel tools last indefinitely but can scratch nonstick cookware. Silicone tools are heat-safe to 400 to 600°F (depending on formulation), won't scratch nonstick, and flex nicely for scraping.

Wood won't scratch either, but it's porous; never dishwasher, always dry immediately. Nylon utensils melt at 400°F and are now considered a no-go for high-heat cooking because of chemical leaching concerns. Silicone for nonstick cookware (won't scratch) and medium heat. Stainless for stainless-clad cookware and high-heat tasks. Wood is safe on everything but demands gentle cleanup.

Are nylon kitchen utensils safe?

We'd skip them. Nylon melts around 400°F; below the temperature of many searing tasks; and the chemical migration concerns at high heat aren't worth it when silicone is just as affordable.

What's the one utensil every cook should own?

A good fish spatula. Thin, flexible metal, beveled edge. It flips fish, eggs, pancakes, and burgers better than any dedicated tool and slides under food without scraping the pan.
