Bakeware is where metallurgy matters most. A cookie sheet, brownie pan, and muffin tin all do nothing except distribute heat, and cheap steel warps, browns unevenly, and develops hot spots within a few bakes. The three materials that perform are aluminized steel (the commercial standard; USA Pan, Nordic Ware, Chicago Metallic), bare aluminum (lightest, most conductive, reactive with acid), and ceramic or stoneware (for rustic breads and casseroles that need deep even heat).
Nonstick coatings on bakeware are optional; a good clean pan plus parchment paper outperforms most factory coatings. Standard sizes that matter: a half-sheet pan (18 x 13), a quarter-sheet (13 x 9), a 9 x 13 cake pan, two 9-inch round layer pans, a 12-cup muffin tin, a 9 x 5 loaf pan, and one dark or enameled loaf for deep-crusted breads. Commercial-weight (1 mm+ steel) warps far less than the flexible grocery-store stuff.
